Background and origin
Chicken Pumpkin Leek Pie is a modern variation of the traditional English or American meat and vegetable pie dish, based on a combination of chicken, pumpkin, and leeks. These ingredients have their own origins and stories, which have evolved over the years to create this hearty, seasonal dish.
The tradition of pie dates back to ancient Greece, but the modern form of meat pies developed in Europe during the Middle Ages. In Great Britain and later in the United States, pie became popular, particularly as a simple yet nutritious dish. We first encountered this recipe in Australia, where it was flavored with basil.

Ingredients
2 chicken breasts
1 small pumpkin
2 stalks of leek
white wine
vegetable broth
olive oil
salt, pepper, nutmeg
Fresh basil
2 rolls of round puff pastry
Preparation
Step 1
Wash the pumpkin , remove the seeds, and cut into pieces. Arrange the pumpkin pieces in a baking dish, season with salt, and drizzle with olive oil . Roast in the oven at 180°C (top and bottom heat) for about 30 minutes until tender.
Step 2
Dry the chicken breasts , cut into finger-width strips, and fry them in a frying pan with hot oil . Season the chicken strips with salt, deglaze with a little white wine , and simmer briefly. Season the fried chicken strips with salt and place them in a bowl.
Step 3 Wash the leek , cut it into pieces and sauté it in a frying pan on low heat with a knob of butter and some stock with the lid closed until soft.
Step 4
Add the roasted pumpkin and sautéed leek to the bowl with the chicken . Season generously with salt, pepper , and nutmeg , and mix thoroughly. Roughly chop or tear the basil , add it to the bowl, and mix again.
Step 5
Roll out the puff pastry in a baking pan and press it into place along the edges. Brush the inside edge with a beaten egg . Spread the filling in the baking pan and flatten slightly. Cover with a second roll of puff pastry and press the edges together with the base. Prick the top with a fork and brush with beaten egg.
Step 5 Bake the pie in a preheated oven at 200°C for 30-45 minutes until golden brown.
